A large choice of spices to try new recipes
The third section of Sita Kadai is about cooking. To help you cook Indian recipes, such as those you may have learned during our cooking class, six sets, with two different sizes, have been conceived so that you can immediately have with you the main spices of the most typical recipes from Tamil Nadu and North India. By purchasing one of these kits, you will not only have specific spices, but you will also go home with these small and handy metal boxes, which include a small booklet of instruction and recipe.
Three Big Kits
Made from rice with several variations of meat (eggs, chicken...), this dish is a must in India! The best known, the one from Hyderabad, includes cloves, one bay leaf, cinnamon, cardamom, coriander, and cumin seed. The very famous mix of garam masala and also some chili and turmeric powder are added. You will find all of these spices in this kit.
If you have in your hand cumin, turmeric and fenugreek powder, mustard seeds, tamarind, dry chili, asafetida, and sambar power, it means that you are about to cook this very common Indian dish, the Sambar. Get this kit so you will not miss any ingredients!
This kit is dedicated to the most cooked meat in India; the chicken. In order to prepare it in the Chettinad way, you will need cinnamon sticks, cloves, cardamom, one bay leaf, poppy seeds, coriander, turmeric and chili powder. The little secret of this recipe lies in the anise and star anise, and this kit offers a condensed of all these spices.
The Dal Tadka
This recipe, which comes from the North India, is famous in all the country. A very specific assortment of spices is mixed with the Dal, in order to give to this sauce, which is eaten with Indian bread, an authentic taste. In the kit you will find coriander and cumin seeds, asafoetida, and finally, dry chili and its powder – what would be an Indian dish without a spicy touch! You will also find turmeric powder, the one that give this special gold color and so tasty taste.
Fish molee and fish curry
Two different kits offer spices to cook to kind of fish recipes: fish Molee or fish Curry. For the Molee, we can find turmeric, Indian black pepper powder, coriander, and chili. For the Curry, we followed the Mish Kozumbu's Pondicherry recipe, which is why the kit includes turmeric, chili and coriander powder, mustard seeds and fenugreek, and of course four little balls of tamarind. Because of these two kits, you have the choice between two different recipes to vary the pleasures with the fish!
